Custom AI Development in Dubai Built on Your Data
Most businesses never need custom AI. Copilot, a business ChatGPT or Gemini plan and a workflow tool cover the common jobs. A build earns its cost when the work depends on your own data in a way those tools cannot reach, such as an assistant that answers from years of project files, or a quoting tool that reads your price lists and templates. That is the work we take on, as an IT company that has looked after Dubai businesses' systems since 2007.

Quick answer
Custom AI development means building software around a large language model such as GPT, Claude or Gemini, connected to a company's own data and systems. Azizi Technologies builds custom AI tools for Dubai businesses, including document question-answering over company files, drafting and quoting assistants, and integrations with existing CRMs and databases.

Key Takeaways
Updated October 2026- Build custom only when ready-made AI tools cannot reach the data or the process involved.
- Most custom AI today is a model API plus your data, not a model trained from scratch.
- For answering from company documents, retrieval (RAG) usually beats fine-tuning.
- Running costs are model usage and hosting, and both belong in the quote.
- Models change every few months, so a build needs upkeep and tests that catch regressions.
What custom AI development is
A model, your data, and the code that joins them.
Almost no business needs to train its own model. What a custom build adds is the part a model cannot do on its own: reading your documents and databases, following your rules, writing results back into your systems, and declining to answer when the source is not there.
We choose the model per job, from OpenAI, Anthropic or Google or an open model you can run privately, connect it to your data through retrieval and APIs, and test it against real questions from your team before anyone relies on it. Who owns the code is agreed in writing before work starts.
Answers with sources
Responses drawn from your own files and systems, with the document shown so staff can check it.
Model chosen per job
GPT, Claude, Gemini or a private open model, picked on accuracy, cost and where the data may go.
Tested before trusted
Real questions from your team are run against every version before it is released.
Fits what you run
Connected to Microsoft 365, SharePoint, your CRM or database through their own APIs.
What We Build
Each of these starts from a process you already run and a data source you already have.
Related services: AI agents and chatbots, AI automation agency and AI document processing.
- Document assistants that answer questions from contracts, manuals, tenders or project files and cite the page they used
- Quoting and drafting tools that read your price lists and templates and produce a first draft for a person to check
- Document processing that pulls fields from invoices, delivery notes or forms into your accounting system or ERP
- AI features added to an existing app or customer portal through a model API
How a Build Is Put Together
The architecture is usually simpler than the sales pitches suggest, and every part of it can be explained to the people who will use it.
- Retrieval over your documents (RAG), so answers come from your files instead of the model's general knowledge
- API connections to the systems the tool reads from or writes to
- Guardrails that set what the tool may answer, what it must refuse and when it hands over to a person
- Logging, so any answer can be traced back to the sources behind it
Data, Hosting and UAE Rules
Where the data goes is settled before the first line of code. For personal data that means checking the build against the UAE's federal data protection law (PDPL) and, for free-zone companies, the DIFC or ADGM rules that apply.
Related services: AI policy and governance and Shadow AI data protection.
- Business API terms under which the providers do not train their models on your data by default
- Hosting in a UAE cloud region where the data requires it, such as Microsoft Azure's UAE North region in Dubai
- A private open model on your own infrastructure when data must not leave it
- Access limited to the people and systems that need it
Testing and Upkeep
Models are updated and retired every few months, and a tool that answered well at launch can drift after a model change. We keep a test set of real questions and run it whenever something changes.
- A test set agreed with your team before launch
- Monitoring of cost per use and answer quality
- Model upgrades handled as planned changes
- Support that can run under the same contract as your IT support
Why Azizi
Why Build AI With an IT Company
A custom tool lives inside your systems, so whoever builds it has to understand those systems too.
We ask whether you need it
Many requests are better served by Copilot or a workflow tool, and we say so before quoting a build.
We run what it connects to
Microsoft 365, SharePoint and the networks underneath are daily work for our engineers.
Built to be checked
Answers show their sources, and every change is tested against your own questions before release.
A common question
Retrieval (RAG) or fine-tuning?
Most business tools need the left column. Fine-tuning has its place, usually alongside retrieval.
What it changes
Retrieval (RAG): What the model can look up when it answers
Fine-tuning: How the model writes and behaves
Keeping facts current
Retrieval (RAG): Update the documents and the answers follow
Fine-tuning: Retrain whenever the facts change
Showing sources
Retrieval (RAG): Each answer can cite the document it used
Fine-tuning: No built-in way to show where an answer came from
Good for
Retrieval (RAG): Answering from company documents and data
Fine-tuning: Fixed formats, a house tone or narrow classification tasks
| Retrieval (RAG) | Fine-tuning | |
|---|---|---|
| What it changes | What the model can look up when it answers | How the model writes and behaves |
| Keeping facts current | Update the documents and the answers follow | Retrain whenever the facts change |
| Showing sources | Each answer can cite the document it used | No built-in way to show where an answer came from |
| Good for | Answering from company documents and data | Fixed formats, a house tone or narrow classification tasks |
Our process
How we get started
Sequenced, scoped and shipped. Every phase has a deliverable you can hold us to.
- 01
The task, the data, the test
We agree the task, the data it needs and a set of real questions the finished tool must answer well.
- 02
Working on your own data
A small version runs on a sample of your data so you can judge the answers before committing to the full build.
- 03
Integrate and harden
Connections to your systems, access controls, guardrails and logging, tested against the agreed questions.
- 04
Launch and look after it
Rolled out to the people who will use it, then monitored and kept current as models change.
